Forgotten Pork Stew
Yield: 4 servings
Ingredients
- 1 1/2 pounds pork stew meat, cut into 1 inch cubes
- 3 medium carrots, cut into 3/4 inch pieces
- 3 medium potatoes, peeled and quartered
- 2 stalks celery, sliced
- 1 medium onion, chopped
- 1 (10 ounce) package frozen lima beans, thawed
- 1 can condensed tomato soup
- 1/2 cup water
- 2 tablespoons quick-cooking tapioca
- 1 teaspoon salt
- 1/2 teaspoon dried basil, crushed
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground red pepper
Instructions
- In a Dutch oven combine meat, carrots, potatoes, celery, onion and lima beans.
- Combine tomato soup, water, tapioca, salt, basil, garlic powder and red pepper. Add to Dutch oven; stir to combine.
- Cover and bake at 325 degrees F for 2 to 2 1/4 hours or until meat and vegetables are tender.
