Posole Rapido
Yield: 4 servings
Ingredients
- 1 tablespoon olive oil
- 1/2 pound lean ground beef
- 1/4 teaspoon garlic powder
- 1/4 teaspoon garlic salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon Mexican oregano
- 2 tablespoons hot chile powder
- 2 (16 ounce) cans hominy, strained and rinsed
- 5 cups mild beef broth or water
Instructions
- Heat a pot over moderate heat. Add olive oil and ground beef; fry until the meat is browned.
- Add garlic powder, garlic salt, onion powder, oregano and chile powder and stir to mix well into the meat.
- Add hominy and broth or water. Bring to a boil, and simmer for 15 minutes.
