Apricot Puree

This puree is delicious when served with hot biscuits, scones, pancakes, waffles or French toast.


1 1/4 cups apricot nectar

1 (6 ounce) package dried apricots

6 tablespoons granulated sugar


  1. Stir all ingredients in a heavy medium size saucepan over medium heat until sugar dissolves and mixture simmers. Cover and cook until apricots soften, 6 minutes.
  2. Remove from heat and cool slightly.
  3. Transfer mixture to a food processor or blender and puree until almost smooth (there will be small bits of apricot remaining).
  4. Remove and refrigerate.
  5. Holds 1 week in refrigerator.

Makes 1 1/2 cups.
