Fritos® Pies

Everyone at the big game will love their own individual Fritos Pie. Make enough as some may want seconds!

Fritos Pies recipe

Yield: 6 servings

Ingredients

  • 4 1/2 cups traditional size corn chips, such as Fritos®
  • 3 1/2 cups (14 ounces) Wisconsin Colby cheese or Wisconsin Cheddar cheese, shredded *
  • 3/4 cups thinly sliced green onions (scallions)
  • 4 1/2 cups chili con carne with beans, homemade or canned
  • 3/4 cups sliced fresh or pickled jalapeño chiles, mild or hot, or a mixture
  • Salsa, shredded lettuce, cilantro, chiles and sour cream for garnish (optional)

Instructions

  1. In six microwaveable bowls (about 5 inches in diameter and 2 1/2 inches deep) evenly layer corn chips, shredded cheese, green onion, chili, more corn chips, jalapeño chiles and top with shredded cheese.
  2. Microwave each pie on HIGH for about 1 1/2 to 2 minutes or until the chili is heated through and the cheese melts.
  3. Top each serving with a spoonful or two of your favorite salsa.

Notes

* or use these in a mixture with Wisconsin Monterey Jack cheese

For conventional oven: Bake at 350 degrees F for about 20 minutes or until cheese is melted and bubbly.
