Hass Avocado Tailgate Tacos

Try these tasty tacos featuring panko-breaded Hass Avocados topped with cabbage, onion and a spicy chipotle mayonnaise.

Hass Avocado Tailgate Tacos

Prep: 20 min | Cook: 10 min | Yield: 4 servings, 2 tacos each

Ingredients

  • 2 cups American blonde ale
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon granulated garlic
  • 2 ripe, fresh Hass Avocados*, peeled, seeded and quartered
  • 1/2 cup panko bread crumbs
  • 16 small corn tortillas (about 6 inch diameter)
  • 1 (8 ounce) bag shredded cabbage or coleslaw mix
  • 1 small red onion, diced small

Instructions

  1. Heat oil in a pan to 350 degrees F.
  2. Combine beer, flour, salt, pepper and garlic in a large bowl and mix well. Set aside.
  3. Coat each avocado quarter with panko bread crumbs.
  4. Dip the coated avocados in beer batter and drop in hot oil. Be sure to turn each avocado piece and remove from oil when the batter is golden brown.
  5. Strain avocado pieces and set aside.
  6. Heat tortillas and stack them in twos, using two tortillas for one taco.
  7. Fill each taco with two pieces of avocado and top with cabbage and onion.
  8. Add chipotle mayo and salsa, as desired.

Notes

* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

For all the meat lovers, try adding a strip of crispy bacon for a pop of flavor!
