Reuben on a Spud
Yield: 4 servings
Ingredients
- 2 slabs frozen hash browns
- 2 tablespoons Thousand Island dressing
- 6 ounces sliced corned beef
- 1 cup sauerkraut, well drained
- 1 cup shredded Swiss cheese
Instructions
- Pan fry hash browns according to package instructions. Cut in half when slabs are turned to brown on second side.
- Place cooked hash browns on a baking sheet and spread with dressing.
- Top with sauerkraut, corned beef and cheese.
- Broil until cheese melts and lightly browns, approximately 2 to 3 minutes.
- Serve immediately.
