The Most Awesome Burritos
Ingredients
- 1 (3 pound) top or bottom round beef roast
- 1 envelope Ortega taco seasoning
- 2 (15 ounce) cans diced tomatoes with green chiles (Ro*Tel)
- 1 tablespoon pepper
- 1 to 2 tablespoons oil
Instructions
- Trim roast of excess fat. Brown roast in oil on all sides.
- Transfer roast to a slow cooker.
- Sprinkle seasoning and pepper over the meat, turning it to coat all sides.
- Top with diced tomatoes.
- Cook on LOW for 8 hours.
- Shred beef with forks and cook another hour or so.
- Serve on warmed whole wheat or flour tortillas with your favorite shredded cheese
and sour cream.
