Ingredients

  • 1 (3 pound) top or bottom round beef roast
  • 1 envelope Ortega taco seasoning
  • 2 (15 ounce) cans diced tomatoes with green chiles (Ro*Tel)
  • 1 tablespoon pepper
  • 1 to 2 tablespoons oil

Instructions

  1. Trim roast of excess fat. Brown roast in oil on all sides.
  2. Transfer roast to a slow cooker.
  3. Sprinkle seasoning and pepper over the meat, turning it to coat all sides.
  4. Top with diced tomatoes.
  5. Cook on LOW for 8 hours.
  6. Shred beef with forks and cook another hour or so.
  7. Serve on warmed whole wheat or flour tortillas with your favorite shredded cheese and sour cream.
