Quesadillas con Guacamole

Ingredients

Quesadillas

  • 1 cup grated Monterey Jack cheese
  • 2 (6 inch) flour tortillas
  • Guacamole
  • Sour cream
  • Green onions, finely chopped
  • Olives, sliced

Guacamole

  • 2 medium avocados
  • 1/2 cup mild or hot green chile salsa
  • 1/2 cup sour cream

Instructions

  1. Place 1/2 cup of cheese on each tortilla. Fold over like a turnover, pressing edges together.
  2. Place tortillas, folded sides together, on a plate; microwave 2 minutes or just until cheese has melted.
  3. Garnish with guacamole, sour cream, chopped onions and olive slices.
