Southwest Pasta Salad
Wagon wheel pasta, black beans and zesty Ro*Tel Tomatoes with sour cream for a Southwest-inspired pasta salad.

Ingredients
- 8 ounces dry rotelle (wagon wheel) pasta, uncooked
- 1 (15 ounce) can Ranch Style® Black Beans, drained, rinsed
- 1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
- 1 cup reduced fat sour cream
- 1/2 cup chopped green bell pepper
- 1/4 cup chopped red onion
- 1/2 cup shredded reduced fat Cheddar cheese
Instructions
- Cook pasta according to package directions. Drain; rinse under cold water until cool. Set aside.
- Meanwhile, stir together beans, undrained tomatoes, sour cream, pepper and onion in large bowl.
- Add pasta and cheese; toss to combine.
- Serve at room temperature.
