Turkey Paprikash

Yield: 4 servings

Ingredients

  • 12 ounces sliced turkey breast
  • 2 teaspoons paprika
  • 2/3 cup plain low fat yogurt
  • 1 tablespoon tomato paste
  • 1 medium onion, sliced into rings
  • 1 teaspoon chicken bouillon
  • 2 tablespoons flour
  • 2 tablespoons chopped fresh parsley
  • 3 cups cooked noodles

Instructions

  1. Spray a cold large skillet with nonstick spray. Heat over medium heat for 1 minute.
  2. Add turkey slices. Cover and cook for about 3 minutes or until heated through.
  3. Remove turkey.
  4. For sauce, add onions to skillet. Cook and stir until tender.
  5. Stir in paprika, bouillon, 3/4 cup water, and pepper to taste.
  6. Combine yogurt, flour and tomato paste; stir into skillet. Cook and stir to thicken.
  7. Toss parsley with hot cooked noodles. Arrange noodles on a large serving platter.
  8. Top with turkey slices.
  9. Spoon sauce over turkey.
