No Photo

Yield: 8 servings

Ingredients

  • 8 center cut pork chops
  • Bacon grease
  • 1 onion, chopped
  • 1 (32 ounce) can sauerkraut, drained, rinsed and patted dry
  • 1 large red apple, diced
  • 1 cup brown sugar
  • 1 tablespoon caraway seeds

Instructions

  1. Heat oven to 350 degrees F.
  2. Heat a large nonstick skillet with a little bacon grease over medium high heat, and brown the pork chops on both sides, about 5 minutes per side.
  3. Place the chops into a 9 x 13 inch baking dish.
  4. Fry the onion in the same skillet.
  5. Mix the sauerkraut, apple, onion, brown sugar and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
  6. Bake until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F.
