Karithopita (Greek Honey Walnut Cake)
Ingredients
Cake
- 1 1/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves
- 1/8 teaspoon salt
- 3/4 cup milk
- 1/3 cup butter, softened
- 1 egg
- 1 cups chopped walnuts
Honey Syrup
- 1 cup granulated sugar
- 1 cup water
- 1/4 cup honey
- 1 teaspoon lemon juice or extract
Instructions
- Heat oven to 350 degrees F. Grease and lightly flour* a 9 inch square baking pan.
- Beat all ingredients, except walnuts and honey syrup, in mixing bowl on low speed of electric mixer (scraping bowl occasionally) for 1 minute. Stir in walnuts. Pour into prepared pan and bake for 30 to 35 minutes or until wooden pick inserted in
center comes out clean.
- Prepare honey syrup by heating sugar and water to boiling, then reducing heat and simmering uncovered for 5 minutes.
- Stir in honey and lemon juice; pour over warm baked cake.
- Cut in triangles and serve.
