Puris (Fried Bread Puffs)

These deflate as they cool, so bring them to the table as soon as they are cooked.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. Combine flours, salt and oil in a bowl and make a stiff dough by adding water. Knead dough for 10 to 12 minutes.
  2. Wrap in plastic wrap and set aside for 20 minutes.
  3. Break off small pieces of dough about the size of a cherry tomato. Roll out to about 3 inches in diameter.
  4. Heat oil in a deep skillet or wok to 400 degrees F. Fry over medium heat a few seconds. They should puff up. If they don't you can lightly press on the top with a spatula to encourage them to puff up. Flip the puri and fry on the other side until light golden brown.
  5. Drain on paper toweling and serve hot. They should be served as soon as possible after deep frying, as they will flatten before too long.
