Irish Potato Pudding
- 6 to 8 potatoes
- 1 teaspoon vanilla extract
- 3/4 cup sugar
- 1 pound butter
- Boil potatoes until tender. Drain.
- Mash potatoes.
- Mix in vanilla extract, sugar and butter.
- Place in a baking dish.
- Bake at 350 degrees F until dried out.
