Chilindrinas

Chilindrinas are a great Mexican snack. You can really top the duros with anything you like - grilled shrimp, etc. The possibilities are endless.

Ingredients

  • Large duros pellets (Mexican wheat pellets)
  • Shredded cabbage
  • Sliced avocado
  • Pickled pork skins
  • Mexican crema*
  • Hot sauce

* You can use sour cream, thinned with a little milk.

Instructions

  1. Heat oil in skillet to 375 degrees F.
  2. Add a duros pellet. Keep duro pellet submerged until it puffs and is lightly browned.
  3. Drain on paper towel.
  4. Top with shredded cabbage, sliced avocado, pickled pork skins and Mexican crema*.
  5. Sprinkle with hot sauce. I prefer Cholula.
