Chilindrinas
Chilindrinas are a great Mexican snack. You can really top the duros with anything you like - grilled shrimp, etc. The possibilities are endless.
Ingredients
- Large duros pellets (Mexican wheat pellets)
- Shredded cabbage
- Sliced avocado
- Pickled pork skins
- Mexican crema*
- Hot sauce
* You can use sour cream, thinned with a little milk.
Instructions
- Heat oil in skillet to 375 degrees F.
- Add a duros pellet. Keep duro pellet submerged until it puffs and is lightly browned.
- Drain on paper towel.
- Top with shredded cabbage, sliced avocado, pickled pork skins and Mexican crema*.
- Sprinkle with hot sauce. I prefer Cholula.
