Green Chilaquiles (Chilaquiles Verde)
Chilaquiles Verde is a Mexican peasant breakfast which uses leftover corn tortillas from the previous day.
Ingredients
- 10 tomatillos
- 4 serrano chiles
- 1 clove garlic, finely chopped
- 8 stale corn tortillas, cut into triangles
- Vegetable oil
- 1/2 cup onion, chopped
- 3/4 cup queso fresco, crumbled
- 1/3 cup sour cream
- 2/3 cup fresh cilantro, chopped
- Onion slivers
Instructions
- Remove the papery husks from the tomatillos. Put tomatillos and chiles into a pot and cover with water until covered. Cook over low heat for about 5 minutes.
- Put the tomatillos, chiles and 1/3 of the water in which they were cooked into the blender and puree until a sauce forms.
- In another large pot, place the sauce, season with salt and cook over medium heat until it reduces a little and concentrates the flavors, for about 5 minutes. Keep warm.
- Pour a little under 1/2 inch of oil into a skillet. Fry half the tortillas until golden brown, for about 3 minutes. Repeat with the remaining tortillas.
- Put the tortillas on white paper towels to drain the fat.
- Leave 1/4 cup of the oil that was used and return all the tortillas to the skillet.
- Add the onion and cover the pan. Let it cook until it is translucent, for about 4 minutes. Stir from time to time so it does not brown or burn.
- Add the sauce and cook stir another 3 minutes.
- Serve the chilaquiles and place queso fresco, sour cream and chopped cilantro on top. Scatter a few onion slivers on top, if desired.
