Spicy Cabbage
Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 jalapeño peppers, seeded and chopped
- 1 medium green or red bell pepper, chopped
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon salt
- 2 medium tomatoes, coarsely chopped
- 1 small head green cabbage, thinly sliced
- 1 tablespoon vinegar
Instructions
- Heat oil in 12-inch skillet until hot. Cook and stir onion, garlic, jalapeño
peppers, green pepper, cumin, coriander, turmeric and salt over medium heat until
onion is tender, about 5 minutes.
- Stir in tomatoes and cabbage. Heat to boiling; reduce heat. Cover and simmer
until cabbage is tender, about 12 minutes.
- Stir in vinegar.
Yield: 8 servings
