Spicy Cabbage

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 jalapeño peppers, seeded and chopped
  • 1 medium green or red bell pepper, chopped
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 2 medium tomatoes, coarsely chopped
  • 1 small head green cabbage, thinly sliced
  • 1 tablespoon vinegar

Instructions

  1. Heat oil in 12-inch skillet until hot. Cook and stir onion, garlic, jalapeño peppers, green pepper, cumin, coriander, turmeric and salt over medium heat until onion is tender, about 5 minutes.
  2. Stir in tomatoes and cabbage. Heat to boiling; reduce heat. Cover and simmer until cabbage is tender, about 12 minutes.
  3. Stir in vinegar.

Yield: 8 servings
