Sweet Rice with Cinnamon
(Roz Mafooar — Morocco)
Ingredients
- 1 1/3 cups regular rice
- 2 2/3 cups water
- 1/2 teaspoon salt
- 1/4 cup butter or margarine
- 1/4 cup confectioners' sugar
- Ground cinnamon
Instructions
- Heat rice, water and salt to boiling in 3-quart saucepan, stirring once or twice;
reduce heat. Cover and simmer 14 minutes without lifting cover or stirring. Remove
from heat.
- Fluff rice lightly with fork; cover and let steam 5 to 10 minutes.
- Stir in margarine and confectioners' sugar.
- Sprinkle with cinnamon; serve warm.
Yield: 6 servings
