Thai Thighs

Ingredients

  • 1/3 cup minced green onions
  • 2 cloves garlic, minced
  • 3 tablespoons hoisin sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon minced ginger root
  • 1 tablespoon sesame oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon hot pepper sauce
  • 2 pounds chicken legs or thighs
  • 2 tablespoons chopped cilantro or parsley

Instructions

  1. In a bowl combine 1/4 cup of the onions, garlic, hoisin sauce, peanut butter, ginger root, soy sauce, sesame oil, lemon juice and hot pepper sauce.
  2. Arrange chicken in shallow baking dish.
  3. Spoon sauce over chicken; bake at 375 degrees F for 45 to 50 minutes or until golden brown and juices run clear when chicken is pierced with fork.
  4. Sprinkle with remaining green onions and cilantro or parsley.
