Cranberry Eggnog Muffins

Ingredients

Muffins

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 2 eggs
  • 3/4 cup eggnog
  • 1/3 cup melted butter
  • 1 teaspoon almond extract
  • 1 cup chopped cranberries (combined with 2 tablespoons sugar)

Streusel Topping

  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup chopped pecans

Instructions

  1. Combine all muffin ingredients.
  2. Combine topping ingredients.
  3. Fill greased muffin cups two-thirds full and top with Streusel Topping.
  4. Bake in 400 degrees F oven for 20 to 25 minutes.
