Banana Toffee Bread
Yield: 2 loaves
Ingredients
- 3/4 cup butter flavored shortening
- 1 1/2 cups granulated sugar
- 4 eggs
- 1 1/2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1/2 teaspoon cinnamon
- 4 to 5 large ripe bananas, mashed
- 1 cup toffee bits (such as crumbled Heath Bars)
Instructions
- Heat oven to 350 degrees F. Grease and lightly flour* 2 loaf pans.
- In a mixing bowl, cream together the shortening and sugar.
- Add the eggs and vanilla extract, and mix until creamy.
- In a separate bowl, combine the flour, baking soda, salt and cinnamon.
- Blend the dry ingredients into the creamed mixture.
- Fold in the mashed bananas and the toffee bits.
- Pour the mixture into the prepared pans.
- Bake for 1 hour.
