Kiwi Walnut Bread
Ingredients
- 2 cups sifted all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups canned or cooked kiwi, drained and chopped
- 3/4 cup chopped walnuts
- 1 egg, beaten
- 1 cup butter, melted
- 1 teaspoon vanilla extract
Instructions
- Sift flour with sugar, baking powder, baking soda and salt into large bowl.
- Add kiwi and nuts and mix well.
- Add egg, butter and vanilla extract. Stir until just blended.
- Turn into greased and floured 9 x 5 x 3 inch loaf pan.
- Bake at 350 degrees F for 1 hour or until done.
- Cool in pan for 5 minutes, then turn out on rack to complete cooling.
- Serve in thin slices spread with softened cream cheese. Strawberry cream cheese is a good choice.
