Sweet Soft Cherry Bread
If you love the maraschino-almond extract combination as much as we do, this Sweet Soft Cherry Bread is for you! So yummy with a cup of coffee any time of the day.
Ingredients
Bread
- 3/4 cup granulated sugar
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 small jars maraschino cherries
Icing
- 2 cups confectioners' sugar
- 2 tablespoons melted butter
- 1/3 cup maraschino cherry juice
- 1/2 teaspoon almond extract
Instructions
- Heat oven to 350 degrees F. Butter a loaf pan.
Bread
- In a bowl, mix the sugar, milk, oil and egg.
- In another bowl, mix the flour, baking powder and salt.
- Stir dry ingredients into wet ingredients.
- Drain the maraschino cherries, reserving the juice.
- Chop the cherries in a food processor or with a knife.
- Gently fold the cherries into the dough mixture.
- Pour the batter into the prepared pan.
- Bake for 55 minutes.
Icing
- In a bowl, combine the confectioners' sugar, melted butter, cherry juice and almond extract.
- Spread the icing on top of the bread.
