Batter Buns

Yield: about 12 buns

Ingredients

  • 2/3 cup warm water
  • 1 envelope dry yeast
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/4 cup soft shortening
  • 1 egg
  • 1 2/3 cups all-purpose flour

Instructions

  1. Measure water into mixing bowl.
  2. Add yeast, stirring to dissolve.
  3. Add sugar, salt, shortening, egg and 1 cup of the flour. Combine with mixer on low speed, guiding batter into beaters with rubber scraper.
  4. Add remaining flour. Beat until smooth.
  5. Spoon into greased muffin cups, filling each a scant 1/2 full.
  6. Let rise in warm place until batter reaches top of muffin cups (about 30 to 40 minutes).
  7. Bake at 375 degrees F for 18 to 20 minutes or until brown.
