Mini Coffee Cakes

Yield: 1 dozen muffins

Ingredients

Coffee Cakes

  • 1/3 cup butter, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1 (3 3/8 ounce) box instant vanilla pudding mix
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 cup chopped walnuts

Topping

  • 1/2 cup chopped walnuts
  • 1/3 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 1/4 teaspoon ground cinnamon

Instructions

  1. In a mixing bowl, cream butter and sugar.
  2. Beat in egg.
  3. Combine flour, pudding mix, baking powder and salt; add to the creamed mixture alternately with milk. Beat until blended.
  4. Stir in walnuts.
  5. Fill paper-lined muffin cups two-thirds full.
  6. Combine topping ingredients; sprinkle over batter.
  7. Bake at 375 degrees F for 20 to 25 minutes or until wooden pick inserted near center comes out clean.
  8. Cool for 10 minutes; remove from pan to a wire rack.
