Oatmeal Coffee Cake

Ingredients

Cake

  • 1 cup oatmeal
  • 1 1/4 cups hot water
  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup butter, melted
  • 2 whole eggs
  • 1 teaspoon vanilla extract

Topping

  • 2/3 cup brown sugar, packed
  • 2 cups flaked coconut
  • 1 cup pecans, chopped
  • 1/4 cup butter, melted
  • 2 teaspoons vanilla extract
  • 1/3 cup evaporated milk

Instructions

Cake

  1. Cover oatmeal with hot water and let set for 20 minutes.
  2. Meanwhile, mix together dry ingredients.
  3. Add butter, eggs, vanilla extract and mix well.
  4. Add oatmeal and mix.
  5. Pour into a 13 x 9 x 2 inch pan, and bake at 350 degrees F for 30 minutes.
  6. Spread Topping on while hot.

Topping

  1. While cake is baking, mix together all ingredients. When cake is done, but still hot, spread topping on and return to the oven for 15 minutes.
