Pie Filling Coffee Cake

Make this coffee cake with your favorite pie filling. It's quick, easy and very tasty!

Ingredients

  • 2 1/2 cups all-purpose flour, divided
  • 1 1/2 cups granulated sugar, divided
  • 3/4 cup (1 1/2 sticks) butter, melted and divided
  • 2 teaspoons baking powder
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon extract*
  • 1 (21 ounce) can pie filling

Instructions

  1. Heat oven to 350 degrees F.
  2. Spray a 13 x 9 x 2 inch baking dish with baking spray, or lightly grease and flour** the dish.
  3. In a small bowl, mix together 1/2 cup flour, 1/2 cup sugar and 1/4 cup melted butter. Mix until crumbly; set aside.
  4. In a large mixing bowl, add remaining 2 cups flour, remaining 1 1/4 cup sugar and baking powder. Mix to combine.
  5. Add egg, milk, extract* and remaining 1/2 cup melted butter. Mix until well blended and no lumps remain.
  6. Stir pie filling into the batter.
  7. Pour batter into the prepared pan.
  8. Sprinkle crumb mixture evenly over pie filling.
  9. Bake for 40 minutes.
  10. Allow to cool before cutting into serving size pieces.

Notes

* Cherry pie filling - use almond extract
Blueberry pie filling - use vanilla extract
Strawberry pie filling - use vanilla extract
Apple pie filling - use vanilla extract and add a little cinnamon to the topping

** For best results, use our Pan Release!

This cake does not lend itself to picking up a slice and eating by hand. A fork is recommended.
