Pie Filling Coffee Cake
Make this coffee cake with your favorite pie filling. It's quick, easy and very tasty!
Ingredients
- 2 1/2 cups all-purpose flour, divided
- 1 1/2 cups granulated sugar, divided
- 3/4 cup (1 1/2 sticks) butter, melted and divided
- 2 teaspoons baking powder
- 1 large egg
- 1 cup milk
- 1 teaspoon extract*
- 1 (21 ounce) can pie filling
Instructions
- Heat oven to 350 degrees F.
- Spray a 13 x 9 x 2 inch baking dish with baking spray, or lightly grease and flour** the dish.
- In a small bowl, mix together 1/2 cup flour, 1/2 cup sugar and 1/4 cup melted butter. Mix until crumbly; set aside.
- In a large mixing bowl, add remaining 2 cups flour, remaining 1 1/4 cup sugar and baking powder. Mix to combine.
- Add egg, milk, extract* and remaining 1/2 cup melted butter. Mix until well blended and no lumps remain.
- Stir pie filling into the batter.
- Pour batter into the prepared pan.
- Sprinkle crumb mixture evenly over pie filling.
- Bake for 40 minutes.
- Allow to cool before cutting into serving size pieces.
Notes
* Cherry pie filling - use almond extract
Blueberry pie filling - use vanilla extract
Strawberry pie filling - use vanilla extract
Apple pie filling - use vanilla extract and add a little cinnamon to the topping
** For best results, use our Pan Release!
This cake does not lend itself to picking up a slice and eating by hand. A fork is recommended.
