Pineapple Coffee Cake

Ingredients

Filling

  • 1 large can crushed pineapple in heavy syrup
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch

Cake

  • 1 cup vegetable oil or 1 cup butter, softened
  • 1 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions

Filling

  1. Combine ingredients, heating until bubbly. Set aside.

Cake

  1. Beat together oil or butter and sugar.
  2. Add eggs, then vanilla extract.
  3. Sift dry ingredients twice.
  4. Add a little at a time to the egg mixture.
  5. Put 3/4 of dough into a 13 x 9 x 2 inch pan, then the pineapple mixture, then place remaining dough on top.
  6. Bake at 325 to 350 degrees F for 30 minutes.
