Applesauce Spice Cake
Ingredients
Cake
- 1 (18.25 ounce) box spice cake mix*
- 3 eggs
- 1 1/4 cups applesauce
- 1 cup chopped nuts
- 1/3 cup vegetable oil
Frosting
- 1 (16 ounce) container vanilla frosting
- 1/2 teaspoon cinnamon
Instructions
- Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch pan.
Cake
- Combine cake mix, eggs, applesauce and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes.
- Stir in nuts. Pour into pan.
- Bake for 40 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan for 15 minutes.
- Invert onto cooling rack. Turn right-side up. Cool completely.
Frosting
- Combine frosting and cinnamon. Stir until blended. Spread over cooled cake.
- Dust frosting with a light coat of cinnamon.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
