Elvis Presley Cake
Although the origin is unknown, this is most likely a cake that Elvis's cook made for him.
Ingredients
- 1 (18.25 ounce) box white cake mix* (plus the ingredients called for to make it)
- 6 tablespoons all-purpose flour
- 1 (8 ounce) can crushed pineapple
- 1 cup granulated sugar
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup butter, softened
- 4 cups confectioners' sugar
- 1 teaspoon vanilla (or rum) extract
- 1 cup chopped pecans
Instructions
- Pour cake mix into a large bowl or the bowl of an electric mixer. Add flour and whisk until well blended. Proceed with the recipe.
- Bake the cake according to the package directions. Remove from oven and poke holes in the top of the cake with a chopstick or handle of a wooden
spoon.
- Place the pineapple with its juice (don't drain) and the granulated sugar in a saucepan over medium heat and bring to a boil. Pour evenly over
the cake. Allow to cool.
- Beat the cream cheese and butter together until fluffy. Add the confectioners' sugar and vanilla extract, and beat until smooth.
- Stir in the chopped pecans.
- Frost the cake.
Notes
The original recipe did not call for rum extract, but if you substitute it for the vanilla extract, it sure makes a tasty addition!
