Elvis Presley Cake

Although the origin is unknown, this is most likely a cake that Elvis's cook made for him.

Elvis Presley Cake recipe

Ingredients

  • 1 (18.25 ounce) box white cake mix* (plus the ingredients called for to make it)
  • 6 tablespoons all-purpose flour
  • 1 (8 ounce) can crushed pineapple
  • 1 cup granulated sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup butter, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla (or rum) extract
  • 1 cup chopped pecans

Instructions

  1. Pour cake mix into a large bowl or the bowl of an electric mixer. Add flour and whisk until well blended. Proceed with the recipe.
  2. Bake the cake according to the package directions. Remove from oven and poke holes in the top of the cake with a chopstick or handle of a wooden spoon.
  3. Place the pineapple with its juice (don't drain) and the granulated sugar in a saucepan over medium heat and bring to a boil. Pour evenly over the cake. Allow to cool.
  4. Beat the cream cheese and butter together until fluffy. Add the confectioners' sugar and vanilla extract, and beat until smooth.
  5. Stir in the chopped pecans.
  6. Frost the cake.

Notes

The original recipe did not call for rum extract, but if you substitute it for the vanilla extract, it sure makes a tasty addition!
