Lemonade Cupcakes

Lemonade Cupcakes recipe

Yield: 24 cupcakes

Ingredients

  • 1 (15.25 ounce) box lemon cake mix
  • 1 cup water
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 (0.23 ounce) package lemonade unsweetened drink mix (optional)
  • 1 (16 ounce) container lemon frosting
  • Lemon slices, for decorating

Instructions

  1. Heat oven to 350 degrees F. Place paper liners in 24 regular-size muffin cups.
  2. Beat cake mix, water, eggs, oil and drink mix (if using) in a large bowl with an electric mixer on low speed until moistened, about 30 seconds. Beat on medium speed for 2 minutes.
  3. Divide batter evenly among muffin cups. Bake for 16 to 19 minutes, until a wooden pick inserted in centers comes out clean.
  4. Cool on wire rack for 15 minutes.
  5. Remove from pans and cool completely.
  6. Frost cooled cupcakes with lemon frosting. Decorate with lemon slices.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
