Mardi Gras Pound Cake
Ingredients
- 8 ounces cream cheese, softened
- 4 eggs
- 1 (18.25 ounce) box white cake mix*
- 3/4 cup milk
- 3/4 cup instant strawberry powder for milk
- 1 teaspoon vanilla extract
- 3/4 cup instant chocolate powder for milk
- Confectioners' sugar
Instructions
- Heat oven to 350 degrees F. Grease and flour** a 10-inch Bundt pan.
- Combine cream cheese and eggs in large bowl; beat until smooth.
- Add dry cake mix and milk; blend until moistened, then beat according to package directions.
- Divide batter into thirds.
- Add strawberry powder to 1/3 of the batter; pour into prepared pan.
- Add vanilla extract to 1/3 of the batter; pour over strawberry layer.
- Add chocolate powder to remaining 1/3 of the batter; pour over vanilla layer.
- Bake for 45 to 55 minutes or until cake tests done.
- Let cool for 10 minutes; turn out of pan.
- Sprinkle with confectioners' sugar.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
