Orange Glow Cake

Ingredients

  • 1 (18.25 ounce) box moist yellow cake mix*
  • 1 tablespoon grated orange peel
  • 1 cup orange juice
  • 1/4 cup granulated sugar
  • 1 tablespoon Tabasco Sauce
  • 1 3/4 cups confectioners' sugar

Instructions

  1. Heat oven to 375 degrees F. Grease a 12-cup Bundt pan.
  2. Prepare cake, adding orange peel to the batter.
  3. Bake for 35 to 40 minutes.
  4. In a 1-quart saucepan, heat orange juice, granulated sugar and Tabasco sauce to boiling. Turn heat to low and simmer 5 minutes.
  5. Remove from heat. Reserve 1/4 cup of the mixture.
  6. Remove cake from oven.
  7. With wooden skewer or fork, poke holes evenly in cake in several places.
  8. Cool cake in pan for 10 minutes.
  9. Invert cake onto wire rack to cool completely.
  10. In bowl, combine orange juice mixture and confectioners' sugar until smooth.
  11. Spoon glaze over top of cake.
  12. Garnish with grated orange peel.
  13. Bake for 35 to 40 minutes or until the cake springs back when lightly touched. Do NOT over-bake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
