Philadelphia Style Butter Cake

Ingredients

  • 1 large egg
  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1 pound confectioners' sugar, sifted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F. Grease and flour** a 13 x 9-inch cake pan.
  2. Beat together the 1 egg, cake mix and butter for 5 minutes. Pour into prepared pan.
  3. Cream together cream cheese, confectioners' sugar, the 2 eggs and vanilla extract. Pour on top of the cake base.
  4. Bake for 35 to 40 minutes until browned.
  5. Cool for 15 minutes, and cut into squares.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
