Three-Layer Pig Pickin' Cake

Ingredients

• 1 (18.25 ounce) box yellow cake mix*
• 4 eggs
• 1/2 cup oil
• 1 can mandarin oranges, undrained
• 1 can crushed pineapple
• 1 small box vanilla instant pudding
• 13 ounces Cool Whip

Instructions

1. Combine cake mix, eggs, oil, and oranges and mix well.
2. Spread into three round cake pans and bake for 20 minutes at 350 degrees F.
3. Cool in pan for 10 minutes.
4. Drain pineapple and blend with instant pudding; fold in whipped topping and spread between layers and on top of cake.
5. Refrigerate.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
