Tomato Spice Cake

Ingredients

  • 1 (18.25 ounce) box spice cake mix*
  • Ingredients to prepare cake mix
  • 1 can condensed tomato soup
  • 1/4 cup water
  • 1 cup chopped nuts or 1/2 cup each chopped nuts and flaked coconut

Instructions

  1. Substituting soup and water for the liquid asked for, prepare cake mix according to directions.
  2. Fold chopped nuts into batter.
  3. Bake in 2 greased and floured round layer cake pans or a 9 x 13-inch pan.
  4. Frost with white buttercream icing if you want.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
