Twinkie Cake

Ingredients

  • 1 (18.25 ounce) box white cake mix*
  • 1 small box vanilla instant pudding
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla extract, divided
  • 4 tablespoons all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup white Crisco
  • 1 cup water

Instructions

  1. Combine cake mix, oil, eggs, pudding and water and 1 teaspoon vanilla extract. Beat at medium speed for 2 minutes.
  2. Pour into a greased and floured** 9 x 13-inch pan.
  3. Bake at 350 degrees F for 40 to 45 minutes or until cake tests done.
  4. In a saucepan mix the flour with the milk. Cook until thick, stirring constantly; cool.
  5. Add sugar, salt, Crisco, butter and remaining 1 teaspoon vanilla extract. Beat until fluffy.
  6. Spread on the cooled cake.
  7. Store in refrigerator.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
