Do Nothing Cake
This is a very moist cake!
Ingredients
Cake
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 (20 ounce) can crushed pineapple with juice (do not drain)
Coconut-Pecan Frosting
- 1 stick butter (8 tablespoons)
- 1 cup granulated sugar
- 3/4 cup evaporated milk
- 1 cup chopped pecans or walnuts
- 1 to 1 1/2 cups shredded coconut
Instructions
- Heat oven to 350 degrees F. Grease a 13 x 9 inch baking dish.
Cake
- In a large bowl, whisk together all the cake ingredients until just combined. Pour into prepared baking pan, and bake for 30 to 40 minutes or until a wooden pick inserted in the middle comes out clean. Do not overbake.
- While the cake is still baking, prepare the frosting.
- Remove the cake from oven and, using a kabob skewer or wooden spoon handle, begin poking holes in the cake.
- Pour frosting over the hot cake, spreading it out to make sure it's evenly dispersed.
- Allow cake to cook for a bit before cutting.
Coconut-Pecan Frosting
- Bring butter, sugar and milk to a boil in a pan on top of the stove. Cook and stir about 3 minutes.
- Remove from heat and stir in nuts and coconut. Pour over hot cake.
