Shawneetown Cake
Ingredients
Cake
- 2 eggs, beaten
- 1/2 cup buttermilk
- 2 cups granulated sugar
- 2 cups all-purpose flour
- 1 tablespoon vanilla extract
- 1 tablespoon ground cinnamon
- 1 teaspoon baking soda
- 1 cup butter
- 1 cup water
- 3 tablespoons cocoa
Icing
- 1/2 cup butter
- 1/2 cup milk
- 3 tablespoons cocoa
- 1 pound powdered sugar
- 2 teaspoons vanilla extract
- 1 cup chopped walnuts
Instructions
- Cake: In large mixing bowl, combine eggs and buttermilk.
- Beat in sugar, flour, vanilla extract, cinnamon and baking soda: set aside.
- Combine butter, water and cocoa in medium saucepan; bring to boil. Reduce heat and continue boiling for 5 minutes, stirring occasionally, then, add to butter and beat until smooth and well blended.
- Pour into a greased 9 x 13-inch pan.
- Bake in preheated 400 degree F oven for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Cool.
- Spread evenly with Icing.
- Icing: Combine butter, milk and cocoa in a medium saucepan; bring to boil, reduce heat and continue boiling 5 minutes, stirring occasionally.
- Beat with sugar until smooth.
- Stir in vanilla extract and nuts.
