Easy Lime Daiquiri Cake
Ingredients
Cake
- 1 (18.25 ounce) box Duncan Hines French Vanilla Cake Mix
- 3 eggs
- 2/3 cup water
- 1/3 cup lime juice
- 1/3 cup Crisco oil
- 1/4 cup rum
- 1 teaspoon grated lime peel
- 3 drops green food coloring (optional)
Glaze
- 1 1/4 cups granulated sugar
- 1/3 cup lime juice
- 1/4 cup rum
- Whipped cream and twist of lime for garnish
Instructions
- Heat oven to 350 degrees F. Grease and flour a 10 inch Bundt or tube pan.
Cake
- Combine cake mix, eggs, water, 1/3 cup lime juice, oil, rum, lime peel and food coloring in a large bowl. Beat at medium speed with electric mixer for 4 minutes. Pour into pan.
- Bake at 350 degrees F for 45 to 50 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan for 20 minutes.
- Invert onto serving plate. Cool for 10 minutes.
Glaze
- Combine sugar, 1/3 cup lime juice and rum. Heat and stir until sugar dissolves.
- Poke holes in cake using skewer or long tined fork. Pour hot glaze slowly over top of cake. Cool.
- To serve, top each slice with whipped cream and a twist of lime, if desired.
