Coconut Pecan Pralines

Coconut Pecan Pralines recipe

Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup evaporated milk
  • 1/2 cup corn syrup
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 2 to 2 1/2 cups chopped pecans
  • 2 1/2 cups shredded coconut

Instructions

  1. Lay out a sheet of wax paper on a 15 x 10 inch jellyroll pan.
  2. Combine sugar, evaporated milk, corn syrup and butter in a large saucepan. Bring to a boil and boil for 3 minutes, stirring constantly.
  3. Remove from the heat and add the vanilla extract, pecans and coconut. Stir for about 4 minutes.
  4. Place spoonsful of candy on wax paper. Let to rest until the pralines have become firm.

Notes

Humidity will cause pralines to become sugary.
