Cracker Barrel Old Country Store Meatloaf
Ingredients
Meatloaf
- 2 pounds ground beef
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 large eggs
- 3/4 cup milk
- 25 Ritz crackers, crushed into crumbs
- 1/2 cup shredded Cheddar cheese
- Salt and pepper to taste
Topping
- 1/2 cup ketchup
- 1/2 cup brown sugar (packed)
- 1 teaspoon Dijon mustard
Instructions
- Heat the oven to 350 degrees F.
Meatloaf
- In a mixing bowl,combine the ground beef, onion, bell pepper, eggs, milk, cracker crumbs, shredded cheese, salt and pepper to taste.
- Form the mixture into a loaf shape, and place it in the center of a 9 x 13 inch baking dish.
- Bake for 35 minutes.
- While meatloaf is baking, make the Topping.
- Remove from oven, and spread half of the Topping over the top.
- Return the meatloaf to the oven and bake for another 15 minutes.
- Remove from the oven again, and spread the other half of the Topping on top of the meatloaf.
- Bake for another 10 minutes; serve.
Topping
- Topping: In a bowl, combine the ketchup, brown sugar and mustard until well blended.
