Joe's Crab Shack Popcorn Shrimp

Joe's Crab Shack Popcorn Shrimp recipe

Yield: 2 to 4 servings

Ingredients

Shrimp

  • 1 pound small fresh shrimp, cleaned and shelled

Marinade

  • 1 teaspoon garlic powder
  • 1 teaspoon brown sugar
  • 1 1/2 teaspoons Tabasco sauce

Egg Wash

  • 2 eggs beaten
  • 1/4 cup water

Breading

  • 1/3 cup all-purpose flour
  • 1 cup cracker meal
  • 1/3 cup plain bread crumbs
  • 1/2 teaspoon paprika
  • 1 teaspoon Creole seasoning

Dusting

  • 4 tablespoons cornstarch

Instructions

Shrimp and Marinade

  1. Place shrimp in a bowl. Add marinade ingredients and mix well. Marinate shrimp for 1/2 hour in refrigerator.

Egg Wash

  1. Beat egg and water together, set aside.

Breading

  1. Mix flour, cracker meal, bread crumbs paprika and Creole seasoning together; blend well.
  2. Set up one bowl for cornstarch, one bowl for egg wash, and one bowl for cracker mixture.
  3. Heat oil for frying. One piece at a time dust shrimp with cornstarch, then place in egg wash, then roll in cracker crumb mixture. Fry until golden-brown. Shrimp will float to top when cooked through; remove and place on paper towels.
  4. Serve with tartar sauce.
