TGI Friday's Citrus Grilled Chicken
Ingredients
- 2 grilled chicken breasts, marinated in Italian dressing before cooking
- Vegetable skewers with zucchini, yellow squash, tomato, red pepper
- 1 cup cooked white or jasmine rice
Instructions
- Make citrus salsa with diced mango, red pepper, jalapeno pepper, diced pineapple and cilantro. Let fruit sit in a small amount of peach nectar and juice to flavor.
- Place 4 ounces citrus salsa on top of chicken breasts and garnish with chopped cilantro.
- Add rice and vegetable skewers.
