TGI Friday's Citrus Grilled Chicken

Ingredients

  • 2 grilled chicken breasts, marinated in Italian dressing before cooking
  • Vegetable skewers with zucchini, yellow squash, tomato, red pepper
  • 1 cup cooked white or jasmine rice

Instructions

  1. Make citrus salsa with diced mango, red pepper, jalapeno pepper, diced pineapple and cilantro. Let fruit sit in a small amount of peach nectar and juice to flavor.
  2. Place 4 ounces citrus salsa on top of chicken breasts and garnish with chopped cilantro.
  3. Add rice and vegetable skewers.
