Hillbilly Chili

Ingredients

  • 2 tablespoons chili powder
  • 2 pounds ground beef
  • 1 medium yellow onion, diced
  • 4 ounces spaghetti, broken into fourths
  • 2 (15 ounce) cans chili beans, undrained
  • 1 (46 ounce) can tomato juice
  • 1 tablespoon granulated sugar
  • 1 teaspoon each salt and pepper
  • Shredded cheese (garnish)
  • Sliced jalapenos (garnish)
  • Sour cream (garnish)

Instructions

  1. In a large pot or Dutch oven over medium high heat, toast the chili powder for about 30 seconds, stirring to keep it from scorching, until very fragrant.
  2. Add the ground beef and diced onion to the pot and sauté until the meat is nicely browned with no pink remaining. Drain the fats well from the mixture.
  3. Stir in the broken spaghetti pieces to coat them in the juices and spices that surround the crumbled meat.
  4. Add the chili beans, tomato juice, sugar, salt and pepper to the pot, stirring well. Bring the chili to a boil, then reduce heat to a simmer for about 30 minutes.
  5. Serve the chili garnished with shredded cheese, jalapenos and sour cream.
