Hillbilly Chili
Ingredients
- 2 tablespoons chili powder
- 2 pounds ground beef
- 1 medium yellow onion, diced
- 4 ounces spaghetti, broken into fourths
- 2 (15 ounce) cans chili beans, undrained
- 1 (46 ounce) can tomato juice
- 1 tablespoon granulated sugar
- 1 teaspoon each salt and pepper
- Shredded cheese (garnish)
- Sliced jalapenos (garnish)
- Sour cream (garnish)
Instructions
- In a large pot or Dutch oven over medium high heat, toast the chili powder for about 30 seconds, stirring to keep it from scorching, until very fragrant.
- Add the ground beef and diced onion to the pot and sauté until the meat is nicely browned with no pink remaining. Drain the fats well from the mixture.
- Stir in the broken spaghetti pieces to coat them in the juices and spices that surround the crumbled meat.
- Add the chili beans, tomato juice, sugar, salt and pepper to the pot, stirring well. Bring the chili to a boil, then reduce heat to a simmer for about 30 minutes.
- Serve the chili garnished with shredded cheese, jalapenos and sour cream.
