Cabernet Dark Chocolate Brownies
The most delicious brownies using dark chocolate, fresh cherries and Cabernet Sauvignon.
Yield: 32 servings, 2 triangles each
Ingredients
- 2 cups fresh cherries, pitted
- 1 cup Woodbridge by Robert Mondavi® Cabernet Sauvignon
- 1/4 cup unsalted butter (room temperature)
- 1 ripe banana, mashed
- 2 large eggs, lightly beaten
- 1/2 cup water
- 1 1/2 cups dark chocolate, chopped
- 1 cup granulated sugar
- 3/4 cup high quality unsweetened cocoa powder
- 2/3 cup all-purpose flour
- 1 teaspoon baking powder
Instructions
- Soak cherries in Cabernet Sauvignon for at least 3 hours, making sure cherries are completely submerged in liquid.
- Heat oven to 350 degrees F. Line 9 inch square baking pan with parchment paper; coat with nonstick cooking spray.
- Mash butter with banana in large mixing bowl.
- Add eggs, one at a time.
- Whisk in water until mixture is smooth.
- In separate large bowl, combine dark chocolate, sugar, cocoa powder, flour and baking powder.
- Slowly add dry ingredients to butter-banana mixture, stirring to incorporate after each addition. Mix until batter is smooth and there are no lumps.
- Gently fold in cherries, reserving a few for garnish; stir batter to incorporate.
- Pour batter into pan. Bake for 40 minutes or until a wooden pick inserted in center comes out clean.
- Garnish with reserved cherries.
