Mascarpone Kolache Cookies

Mascarpone Kolache Cookies are an excellent choice for Christmas cookie trays.

Mascarpone Kolache Cookies recipe

Yield: 2 dozen cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 1 (8 ounce) container Crave Brothers Farmstead Classics Mascarpone cheese
  • 1/4 cup apricot preserves
  • 1/4 cup strawberry preserves
  • Confectioners’ sugar

Instructions

  1. Combine flour and salt in a bowl.
  2. Beat butter and mascarpone in a large bowl until light and fluffy. Gradually add flour mixture; beat until combined.
  3. Shape dough into a disk; wrap in plastic wrap. Refrigerate for at least 2 hours.
  4. Heat oven to 350 degrees F.
  5. Roll out dough on a lightly floured surface to a 15 x 10 inch rectangle, about an 1/8 inch thick. Cut into 24 (2 1/2 inch) squares. Place 1 inch apart on parchment-lined cookie sheets. Place heaping 1/2 teaspoon apricot preserves into the center of half of the squares. Repeat step with strawberry preserves. Fold opposite corners of dough over preserves; pinch tightly at center to seal.
  6. Bake for 15 to 18 minutes or until golden brown.
  7. Let stand for 5 minutes before removing to wire racks to cool completely.
  8. Dust with confectioners’ sugar.
