Blue Ribbon Fair Cookies

Blue Ribbon Fair Cookies recipe

Ingredients

  • 3 cups + 2 tablespoons all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups light brown sugar, firmly packed*
  • 1 1/2 cups (3 sticks) unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 2 3/4 cups dark chocolate chips or chunks

Instructions

  1. Heat oven to 375 degrees F. Line cookie sheets with parchment paper.
  2. In mediium bowl whisk flours, baking powder, baking soda and salt together until evenly combined. Set aside.
  3. In large bowl combine sugars and butter. Beat on low speed for 1 minute until smooth.
  4. Add eggs and vanilla extract. Increase speed to medium and beat for 2 minutes until light and smooth, scraping bowl well.
  5. Add flour mixture and mix on low speed just until thoroughly combined, scraping bowl well.
  6. Stir in chocolate chips or chunks. Scrape bowl well.
  7. Use 2 inch diameter scoop or drop dough by 2 tablespoons onto cookie sheets 2 inches apart. Bake for 10 to 14 minutes until cookies are light golden brown. Do not over-bake.
  8. Cool for 5 minutes on pans before transferring to cooling rack.
  9. Store tightly covered.

Notes

* Do not substitute dark brown sugar as the molasses content is higher than in regular light brown sugar.
