Apricot Cheese Wafers
Yield: 7 dozen
Ingredients
- 1/2 cup butter, softened
- 3 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup dried apricots, finely chopped
Instructions
- With an electric mixer cream butter and cream cheese. Gradually add sugar and continue beating until fluffy. By hand, stir in the flour and apricots; mix until combined.
- Shape the dough into four or five logs about 1 inch in diameter. Wrap each log in wax paper. Chill for three or more hours.
- Heat oven to 350 degrees F.
- Cut dough into 1/4 inch slices. Place an inch apart on an ungreased cookie sheet.
- Bake for 8 to 10 minutes.
- Cool on a wire rack.
