Cranberry Icebox Cookies
Yield: about 5 1/2 dozen
Ingredients
- 1 1/4 cups butter, softened (no substitute)
- 1 cup firmly packed brown sugar
- 2/3 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 3 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 cup chopped walnuts
- 2 cups fresh or frozen cranberries, chopped, or 1 cup dried cranberries, chopped
Instructions
- Cream butter and sugar. Add eggs and beat well. Add flavorings. Add dry ingredients, walnuts and carefully fold in cranberries.
- Shape into 3 rolls, and refrigerate for at least 4 hours or overnight.
- Heat oven to 375 degrees F.
- Slice into thin slices and bake for 10 to 12 minutes.
