Cranberry Icebox Cookies

Yield: about 5 1/2 dozen

Ingredients

  • 1 1/4 cups butter, softened (no substitute)
  • 1 cup firmly packed brown sugar
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup chopped walnuts
  • 2 cups fresh or frozen cranberries, chopped, or 1 cup dried cranberries, chopped

Instructions

  1. Cream butter and sugar. Add eggs and beat well. Add flavorings. Add dry ingredients, walnuts and carefully fold in cranberries.
  2. Shape into 3 rolls, and refrigerate for at least 4 hours or overnight.
  3. Heat oven to 375 degrees F.
  4. Slice into thin slices and bake for 10 to 12 minutes.
